Boulgur has Vitamin B3, B5, B6, Iron, Magnesium, Protein and plenty of fiber and lower nutritional values than white bread.
Hard wheat is preferred in making Freekeh. Wheat sown in November-December is harvested while it is green, close to maturity. It is left to dry under the sun for a day. The next day, the wheat ears, which are made into small heaps by the "Freekeh masters", are set on fire with their stalks and smoked by constantly mixing with rakes.
Ears, which are left to dry for 3-4 days after the smoking process, are separated into grains and ground in mills to become "firik boulgur". Its appearance is coarser than other boulgur and has a greenish color.
